If you've been outside recently you have probably noticed the clouds have parted, the sun is shining through, and the temperatures are rising. SUMMER IS HERE! Now before you run full speed into the nearest body of water lets get that snack game on pointe.
What is the first treat you think of for a hot summer day? Maybe its watermelon, maybe its BBQ, but for me, it is the delicious cooling sweetness of a popsicle. As we sit here in the newly 90-degree heat of summer we decided the best recipe we could possibly make for you right now is a vegan strawberry popsicle!! We loved making these, and enjoyed eating them even more!

Wash and remove the stems on the strawberries. Finely dice and set aside.
Place the strawberry powder in the blender with the coconut milk, yogurt, and honey. Blend until smooth, and then stir in the diced strawberries.
Pour into a popsicle mold and add the sticks. Freeze for at least 6 hours, until solid.
To get the popsicles out of the mold you may need to run warm water on the bottom. You can then remove the popsicles and store them in a Ziploc bag for longer storage. They will keep for 1-2 weeks.
