With the weather getting warmer we have been leaning more towards iced beverages than our usual hot coffees and teas. But no matter how much we love a good iced latte, you have to mix it up from time to time!
In steps one of our Southeast Asian favorites... grass jelly! If you have never had this (or even heard of it) you could relate it a bit to boba, basically a milk tea with jelly cubes at the bottom. Grass jelly is made by using tea from the stalk and leaves of the Chinese mesona plant mixed with arrowroot powder to create the jelly consistency. It is supposed to have a cooling effect on the body making it a perfect summertime beverage! You can find grass jelly mixes, and sometimes fresh prepared grass jelly at your local Asian market, or order it online.
For this recipe, we used this grass jelly mix, Stevia for a low-calorie sweetener, and Dragon Fruit Powder for a fun pink color and light flavor!
You can use as much or little Dragon Fruit Powder as you choose. We were going for a light almost lavender-pink so we used less, but trust your tastebuds and add as much as you desire! The same goes for the Stevia powder. Ours is very potent so we use only a small amount, but you can add more as needed!
