Refreshing Lavender Mojito

I don't know about you, but all this time spent at home has turned our kitchen into my new favorite bar! 

We have been exercising those mixology skills and getting creative with some tried and true recipes. 

The inspiration for this minty little beverage came from the piles of mint taking over the yard, and some leftover lavender simple syrup in our fridge from our weekend Lavender Lattes that was waiting to be used!

Let me tell you, this did not disappoint! A fun floral take on the classic mojito! 

 

 

Nature Restore Organic Lavender Flowers    

Ingredients

10 fresh mint leaves 
½  lime cut into wedges
1-2 tbsp Lavender Simple Syrup
½ cup sugar
½ cup water
1 shot White Rum
Club soda or Seltzer water
Ice

Instructions

Begin by making your simple syrup:

Combine Lavender, sugar, and water in a pan and bring to a boil, stirring periodically. Once boiling, turn off the heat, and let the flowers steep until cooled. Once cool, strain syrup through a fine-mesh sieve or cheesecloth. Store in the fridge until ready to use. 

    

Lavender Simple Syrup

    

On to the cocktail: 

Add mint and squeezed lime into your glass or shaker. Muddle together just enough to bruise the leaves (not break them up). 
 
Add simple syrup, rum, and ice and either shake to combine or stir. 
 
Top it off with your choice of bubbles, club soda or seltzer water (we used lemon Spindrift since that is what we had on hand) 
 
Add an extra lime wedge or a sprig of mint to garnish and enjoy!
