Celebrate Earth Day with Delicious Lavender Pudding Cups!

This April sees the arrival of another Earth Day, where we, earth’s citizens, take a moment to reflect on our place in the world. The first Earth Day was way back in 1970 when flares, hippies, One Love, and peace were all high on the agenda. 10% of the American population at the time, that’s 20 million people, protested against ‘environmental ignorance’ to demand a better future for our planet.

Now recognized as the earth’s largest civic event, that first Earth Day is widely regarded as the beginning of today’s modern environmental movement. Millions of people now take part in peaceful protests, marches, and activities to make the earth a better place for its billions of inhabitants.

So whatever you decide to do this Earth Day, you’ll feel part of an ever-growing community of dedicated, passionate eco-warriors, fighting for climate justice.

Not all of us can join in with events, but with our help, you can still play a part! One of the biggest impacts we can make on the environment is adopting a plant-based diet – be that full time or for a day once or twice a week.

Here, we celebrate all the health benefits that a plant-based diet brings (less saturated fat, cholesterol, and processed foods, more vitamins, minerals, lean protein, and whole foods). That’s why we’ve created these beautiful lavender cups, made using crushed up Oreo cookies (which are suitable for vegans) as the ‘earth’ and our organic lavender flower buds.

Not only does lavender have a beautiful scent that helps calm and lift the senses while promoting a sense of balance and restful sleep, but it tastes amazing too! These delicately sweet, satisfyingly chocolatey cups make the perfect dessert or mid-afternoon treat and can be prepared in advance for when you want to wow your family after dinner or simply indulge in a sweet, yet healthier treat. You can even add wooden ‘garden markers’ and a sprig of mint for that authentic earthy garden look. Which is ideal for celebrating Earth Day!

We’ve used plant-based milk, Medjool dates and chia seeds to make this recipe all-inclusive for vegans and non-vegans alike, which truly gets into the spirit of a day celebrating the earth as one.

Ingredients

Pudding 

1 1/2 cups non-dairy milk of choice
5 Medjool dates, pitted (can substitute 2 tablespoons of agave)
1 teaspoon vanilla extract
1/4 cup raw cacao powder
Generous pinch of sea salt
1/4 cup chia seeds

Cups

Oreo cookies (crushed or blended) - Dirt
Lavender flowers or mint to top
optional popsicle stick or wooden spoon "garden marker"

Instructions

Add all pudding ingredients to a high-speed blender and blend until smooth and thickened. 

Fill your cup ¾ way with pudding, fill remaining with oreo crumbles, and top with lavender flowers or a sprig of mint and popsicle stick
