Ready for some waffle FUN?!
We were in the mood for an extra colorful breakfast treat to bring a little happiness to another quarantine morning. So where do we turn??
DRAGON FRUIT POWDER of course!!
This extra bright and cheery powder actually turns out purple in some recipes, giving our waffle stack some serious unicorn color vibes.
We used our Dragon Fruit powder to make a coconut cream sauce to drizzle that purple deliciousness all over our already mouthwatering waffle stack.
Optional other toppings could be berries, sliced almonds, chia seeds, bananas, some nut butter, whipped cream, or even dessert it up with some rainbow sprinkles!!
Without further ado...we hope you enjoy this recipe!
Ingredients
Waffles
2 cups all-purpose flour
1 teaspoon kosher salt
1 1/2 tablespoons baking powder
1 tablespoon sugar
1 2/3 cups milk
2 eggs
1/3 cup butter, melted
1 teaspoon vanilla extract
Dragon Fruit Sauce
1 cup coconut cream (1 can of full-fat coconut milk)
1/4 cup sugar
1 tsp vanilla extract
Instructions
Preheat the waffle iron.
Combine the flour, salt, baking powder, and sugar in a medium-size mixing bowl. Mix to combine.
Add the milk and the eggs. Whisk to combine.
Pour the melted butter and the vanilla into the batter and whisk until mostly smooth.
Pour onto the hot waffle iron and cook according to the manufacturer’s directions.
While Waffles are cooking prepare your sauce.
Combine Coconut cream (the solid top half of your can of coconut milk), Dragon Fruit powder, vanilla, and sugar. Whisk to combine.
Depending on the thickness of your coconut milk this could be more of a coconut whip than a sauce. If you would like to thin it out you can add in small amounts of the leftover liquid from your can of coconut milk until you reach your desired consistency.
Once waffles are cooked, top with your beautiful purple coconut sauce and your favorite fruity toppings!
