Dairy-Free Acai Coconut Custard

If just the word "custard" has you salivating already, then this one is for you! 

We partnered up with @oliveandartisan to create this wonderful recipe for you all! And after a long recipe development process, she created this incredibly delicious dairy-free coconut custard and we just love it. If that weren't enough she has topped them with freshly toasted coconut which (in our opinion) ups the deliciousness factor even more than we thought possible!! 

I mean, who doesn't love toasted coconut?! 

We highly recommend making these for yourself. They are so worth it!

Ingredients

1 can coconut milk
3 tablespoons açaí powder
2 cups white chocolate chips
1 teaspoon coconut extract
Juice of 1/2 a lime
1/2 teaspoon flavorless gelatin
1 cup coconut flakes, processed into small bits

 

Instructions

In a medium saucepan, warm the coconut milk and açaí powder over medium heat. (The açaí may clump but whisking will do the trick).
  
Place the gelatin into 3 tablespoons cold water to bloom.
  
Once the mixture is warmed but not boiling, take off the heat and add the white chocolate, coconut extract, and lime juice. Whisk until the white chocolate is fully incorporated.
  
Add the gelatin mixture and stir to combine.
  
Pour into 4 parfait cups, cover and place in the fridge to chill for at least 4 hours or overnight.
  
In a skillet over medium/high heat, toast the coconut, stirring continuously, until golden brown. Let cool to room temp before sprinkling over the custard and serving
