Happy National French Toast Day!!
This stack is seriously THE BEST french toast I have ever made, and I want to share all the glorious details with you all so you will be able to achieve all the brunch goals.
Let me break it down...spiced vanilla Milk Thistle toast, topped with a pomegranate pear compote, the most luscious and juicy blueberries you can find, and delicious crushed pistachios. I cannot express how delicious is stack was.
The Milk Thistle has a light nutty flavor which added the perfect touch to this dish...plus some detox power!!

Ingredients
1 1/2 cup almond milk
1 egg
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp orange peel
1/4 tsp ginger
Thick cut bread of your choice
Instructions
Combine all ingredients (except bread) in a medium mixing bowl and whisk together
Place one slice of bread into the mixture coating each side. Place the coated slice into a heated pan and cook until golden brown on each side.
Repeat with remaining slices.
Optional toppings
Fresh Blueberries
chopped pistachios
pure maple syrup
Pear and pomegranate compote
Dice 1 large pear, and add to a pan, add just enough water to cover the fruit.
Cook until pear is soft and crushable. crush the pear in the pan and continue to reduce.
Add 2 tsp Nature Restore Pomegranate Powder and mix well.
Remove from heat and stir until it has slightly cooled enough to eat.
Serve warm.
