These Dragon Fruit Popsicles, made by Ruthanne from @thebigleybasics, are sure to be a hit with all of your friends and family. If you're looking for a fun and fruity dessert to cool down with, be sure to give these popsicles a try!
Prep Time: 15 minutes
Freeze Time: 8+ hours
¾ cup full fat canned coconut milk
1 white dragon fruit
1 ½ cups frozen strawberries
¼ cup raw honey or pure maple syrup
¼ tsp salt
3 TBS dragon fruit powder
Cut open the dragon fruit and scoop out the flesh. Add the flesh to a high speed blender, along with the strawberries, coconut milk, sweetener, salt, and dragon fruit powder. Blend until smooth.
Pour the mixture into silicone popsicle molds (this recipe makes 10 popsicles). Place the lid on the popsicle molds and insert a popsicle stick into each popsicle.
Place the popsicles in the freezer to harden overnight, or for at least 8 hours.
After the popsicles are frozen, remove them from the popsicle molds (I find it helps to push the popsicles out of the molds from the bottom).
