Vegan, Gluten free, dairy free Strawberry Frosted Chocolate Donuts using Nature Restore Organic Freeze Dried Strawberry Powder

Did somebody say donuts?! We adore donuts here at Nature Restore so when Ruthanne from @thebigleybasics said that she’d created the ultimate in donuts, it’s safe to say we got excited.

Not only has Ruthanne added a white chocolate topping to these delicious donuts, but she’s also used our Organic Strawberry Freeze-Dried Powder to make an amazing strawberry frosting and we promise you, her Strawberry Frosted Chocolate Donuts are divine.

Freeze-dried strawberries are rich in immune system-supporting antioxidants and fiber that take care of our gut. So although donuts aren’t the healthiest food, this snack does have some virtuous points!

Ruthanne has also allowed the recipe to be adaptable, so if you’re dairy-free or vegan, you can still indulge, plus they’re gluten-free to boot.

Ingredients

Donuts

1 ½ cups oat flour
½ cup cocoa powder
1 ½ tsp baking powder
½ tsp salt
2 flax eggs or regular eggs
½ cup pure maple syrup
2/3 cup water or dairy-free milk
1 tsp pure vanilla extract

2 tbsp coconut oil, melted

Frosting

4oz dairy-free white chocolate
1 tbsp + 1 tsp coconut oil

¼ cup Organic Freeze-Dried Strawberry Powder

Instructions

Preheat the oven to 350°F and grease 2 donut pans with cooking spray.
While the oven is preheating, add all of the donut ingredients into a large bowl and whisk everything together until you have a smooth batter.
Evenly distribute the batter between the greased donut molds. This recipe makes 12 donuts.
Place the donuts in the oven and bake for 18 minutes.
Once the donuts are baked, allow them to cool for 15 minutes in the donut pans.
While the donuts cool, prepare the strawberry frosting: add the white chocolate and coconut oil to a glass bowl and heat in the microwave, stirring frequently so the chocolate doesn't burn. Once the chocolate is melted, add in the freeze-dried strawberry powder and whisk until the frosting is smooth.
Once the donuts have cooled, remove them from the donut pans and gently dip the top of each donut in the strawberry frosting.
Place the frosted donuts on a cooling rack and allow the frosting to harden. Feel free to drizzle the donuts with melted dark or white chocolate or sprinkle them with more freeze-dried strawberry powder.
Enjoy the donuts immediately or once the frosting has hardened.

Store the donuts in a sealed container at room temperature for 3-4 days or in the fridge for 5-6 days. You can also freeze them in a sealed container for 2-3 months.

We hope you enjoy them as much as we do – tag us @nature.restore and @thebigleybasics and let us know!
