Rose Shortbread Cookie Sandwiches

If you’re a regular around here, then you’ll know that we’re huge fans of both a brightly colored Insta feed, and delectable creations using our superfood powders and dried flower teas.

So this time we’re celebrating these Rose Shortbread Cookie Sandwiches created using our Nature Restore Dried Rose Flower Buds by Karlee Sisler Flores from @oliveandartisan.

Beautifully pink and fresh looking, they can be made with or without extra food coloring. If you prefer not to use food coloring, and instead rely on the natural pinkness from the rose buds, then they’ll tun out a light, delicate pink. If you like to use food coloring, you can have fun experimenting with the amount you use to get your perfect color.

Rose flower buds are positively blooming with beneficial vitamins and antioxidants and they’re the perfect flavor pairing with the vanilla bean paste in this recipe.

 

 

Ingredients

Cookies

1 ½ cups butter
1 cup powdered sugar
¼ teaspoon rosewater
¼ cup Nature Restore Dried Rose Flower Buds, slightly muddled
3 drops red food coloring (optional)
3 cups all purpose flour
Pinch of salt

Frosting

1 cup butter
2 cups powdered sugar
1 teaspoon vanilla bean paste
2 drops red food coloring (optional)

 

Instructions

Preheat the oven to 350 degrees

Cookies

In a standing mixer or electric mixer, cream the butter, powdered sugar, rosewater, muddled rose buds and food coloring (if using).
Add in the flour and mix until combined.
Place the dough between two pieces of parchment paper and roll out to ¼ inch thick.
Place in the fridge to chill for 30 minutes.
Remove from the fridge and cut out 1 inch cookie shapes and place each one on a baking sheet an inch apart.
Bake in the preheated oven for 12-14 minutes.
Let cool slightly before frosting.

Frosting

In a standing mixer or electric mixer, cream the butter, powdered sugar, vanilla bean paste, and food coloring (if using) until light and fluffy.
Place into a piping bag fitted with a small star tip.
Pipe the frosting onto the bottom of one cookie and sandwich together with another.

Arrange beautifully before wowing your friends!
