Fluffy Blue Butterfly Pancakes

Think you can only get vibrant blue with artificial coloring??

Think again.

Our super fluffy and insanely blue pancakes include NO ARTIFICIAL COLORS!! We get our blue from butterfly pea powder, which is a powdered version of butterfly pea flowers! Think matcha, but instead of powdered green tea, we have powdered butterfly pea tea! 

In a pancake recipe, it has no notable "tea" flavor, so all you get is a very fun way to mix up your pancake routine with color! 

    

Nature Restore Butterfly Pea Pancake Recipe

    

Now with this one, you have the option to make from scratch or to just add a big unmeasured scoop of blue powder to your favorite "just add water" pancake mix and it will come out just as well! Whether you decide to make the fast simple version or make from scratch, be sure to leave your batter slightly thicker to make sure your pancakes are fluffy enough to really show off that color! 

These are so fun to make with the kids too, you can start by preparing the mixture for them, and then they can add the blue and stir it up watching the white and blue swirl into one oceanic batter!

Nature Restore Butterfly Pea Powder natural blue food coloring

      

Ingredients 

 

2 cups All-purpose Flour
2 tbsp Baking Powder
1-2 tbsp Nature Restore Butterfly Pea Powder
1 pinch Kosher Salt
2  Eggs
2 cups Milk Of Your Choice
1 tsp Pure Vanilla
¼ cup Oil Or Melted Butter
    

Optional Toppings

Nut Butter 
Chocolate Chips
Fresh berries (not pictured)
Bananas (not pictured)

Instructions 

In a large bowl, whisk flour, Butterfly Pea Powder, baking powder, and salt.
In another bowl, whisk eggs, milk, vanilla, and oil until well combined. Pour milk mixture into the dry mixture and whisk gently to incorporate. Don’t over-mix.
Use a 1/4 cup measuring cup to measure out your batter for each pancake. 
Cook pancakes over medium-low heat until golden brown on both sides. Serve with your favorite toppings.

Hint: If making for the 4th of July, top with whipped cream and raspberries! Or make a batch with Raspberry Powder instead of Butterfly Pea to make a red and blue striped pancake tower of goodness!!
