Our friend Morgan from @nourishedandspiced has created these irresistible Strawberry Cheesecake Protein Cups. These high-protein cups are a fantastic way to satisfy Mom's sweet tooth while providing a good source of protein from cottage cheese and protein powder. The Organic Strawberry Powder not only adds a natural strawberry flavor and beautiful color but also retains its valuable nutrients. These protein cups are the perfect make-ahead treat that Mom can enjoy throughout her special day, knowing she's indulging in something both delicious and nourishing.
Ingredients:
- ½ cup oats
- ½ cup graham cracker or similar cracker/cookie of choice
- 3 tbs melted butter
- 1 egg
- 1 cup cottage cheese
- 1/3 cup nonfat greek yogurt
- 2 tbs of cream cheese-to add authentic cheesecake flavor
- 2 tbs maple syrup
- 1/4 tsp baking powder
- 1/2 juiced lemon
- 1 scoop vanilla protein powder
- 1 egg
- 4 tbs Organic Strawberry Powder
- 4 sliced strawberries for topping
Instructions:
- Preheat oven to 350°F (175°C). Line muffin tin with liners and set aside.
- Put oats and graham cracker of choice in blender and pulse until crumbly, pour into bowl. Melt butter in microwave for about 45 seconds and add to oats. Mix and line bottom of muffin tins and press down.
- Wipe out blender and add remaining ingredients (minus strawberries) and blend until creamy.
- Add to muffin tins and top with slice of strawberry (makes around 8 cups).
- Bake for 38-40 mins, and remove cheesecake cups from muffin tin so they don’t keep cooking, and let rest. These are BEST when placed in the fridge for a couple hours to set up to cheesecake texture!

- In a large bowl, whisk together the olive oil and honey or maple syrup. Beat in the eggs one at a time.
- Stir in the mashed bananas, milk, baking soda, vanilla extract, and salt.
- In a separate bowl, whisk together the whole wheat flour, cinnamon, and Nature Restore Organic Milk Thistle.
