Just when you thought that bright beautiful blue was enough, add a quick squeeze of lemon and watch it change before your eyes! Butterfly Pea flower powder is pH sensitive, meaning it will react to acidic liquids. A squeeze of lemon or lime juice into your tea will change the color from the blue to a lovely purple or pink! Or mix with alkaline water to watch it turn green!

This works in frostings too, one simple flower can give a whole array of natural blues, purples, and pinks depending on the amounts of butterfly pea and acid added!
