Any day now you will be gathering with your loved ones, exchanging gifts and sharing a deliciously festive meal! But why stop at dinner?? We have some gorgeously elegant Panna cottas to share with you that will be the show stopper of the dinner table.
They are even dairy-free so all of your guests can enjoy them without worry!

1tsp vanilla extract
3 tbsp water
1 packet gelatin (or 1tsp agar powder for vegan alternative)
2 cups almond milk
3 tsp agave nectar
1/2 tsp beet powder (optional for color)
Pomegranate seeds (optional for garnish)
In a medium-sized bowl, pour vanilla extract and water. Sprinkle the gelatin on top and set aside.
In a small saucepan, heat almond milk and agave syrup. When the mixture comes to almost boiling, remove from heat. Let sit for one minute before pouring on top of the gelatin mixture.
Stir to combine and let come to room temperature.
Prepare jars for filling by placing in a muffin tin to the desired angle.
Once cooled to room temperature, fill the tilted jars halfway, and cool until firm.
With remaining liquid, add Pomegranate and optional red beet powders and mix well.
Once the first layer has become firm, remove the jars from the muffin tin, and add the red mixture to fill the jar.
Cool until firm, serve chilled with pomegranate seeds for garnish!
