Cordyceps Garlic Herb Mashed Potatoes
The all-time favorite Thanksgiving side dish...MASHED POTATOES!!
With so many variations and unhealthy options out there, we decided to make our own super healthy and beyond delicious version proving you dont have to compromise on flavor and creaminess to be healthy!
Although our ingredients are all health-promoting wonders, these potatoes taste sinfully good with so many layers of flavor and goodness!
I mean, roasted garlic alone is delicious but just take a look at that Cordyceps spice blend!! SO GOOD!!
Plus, there is a healthy dose of chopped kale so when you go back for seconds you can feel so good about your choices.
Boil potatoes until tender, and easily pierced with a fork.
While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Add onions and cook for 15 minutes, stirring frequently.
Add kale to skillet and cook for 2 minutes until wilted, stirring frequently.
Once done, strain and mash potatoes.
Add in your roasted garlic cloves (to taste) and mash together.
Stir in Almond Milk, chicken broth, herbs, Cordyceps, and seasonings. Mix well.
Add kale mixture last and stir to combine. Transfer to a serving bowl and serve hot.
