Cinnamon and Sugar Bilberry Baked Donuts

Here’s how we made this delicious delight…




½ cup butter, melted
¼ cup brown sugar
1/3 cup granulated sugar
1 teaspoon vanilla extract
1 teaspoon almond extract
1 egg
2 cups AP flour
1 teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
For the topping,
¼ cup butter, melted
¾ cup sugar

1 tablespoon cinnamon


Preheat oven to 400 degrees.
In a small bowl, add boiling water to bilberries until covered. Let sit while making the batter.
In a medium/large bowl, mix the butter, brown sugar, granulated sugar, vanilla and almond extract. Add the egg and mix just until combined. Add 1 cup of the flour, baking soda, and salt. Mix until you no longer see flour. Add in half of the butter milk and combine. Add the rest of the flour and mix, the rest of the buttermilk and mix.
Drain the bilberries then fold into the batter.
Place the batter into a freezer bag or piping bag with the tip cut off to about a dime or nickel size.
Spray a mini donut pan with cooking spray and pipe the batter into the molds about ¾ full.
Bake in the oven for 7-8 minutes.
Mix the cinnamon and sugar together for the topping.
Immediately brush baked donuts with melted butter and toss in cinnamon sugar mixture.
