
Have you ever made pasta from scratch? It's not as hard as you may think and honestly SO much better than store-bought!!
What we love about gnocchi is that you make it with your hands, without worrying about pasta rollers and mixer attachments. Plus, each gnocchi is unique giving the end product a fun rustic feel that you can enjoy even more knowing you made it with your own hands!
You can even get the kids involved and make a whole event out of the process!

Ingredients
2 pounds of potatoes
2.5 cups flour
2 eggs
1 tablespoon of salt
Instructions
Peel and boil the potatoes
Run the potatoes through the ricer on the finest setting, or blend in a high-speed blender until fine
In a separate bowl, mix the flour with the red beet powder, adding more for deeper color if desired
When all of the potatoes have been riced, shape them with a well in the center and had half the flour and both eggs
Start mixing potatoes, flour, and eggs together with a fork, incorporating slowly
As the dough begins to take shape, incorporate the rest of the flour and begin kneading with your hands.
Separate the dough into four parts and roll into a stick shape.
Cut small square pieces and dust with flour.
Press with a fork to create small lines on the top of the pasta.

To cook: Boil the gnocchi until they float. Strain and add to saute pan with butter and herbs. Serve garnished with fresh herbs
