Nature Restore Cordyceps Recipe and Uses

Ingredients

Spice blend
1tsp Mustard powder
1/2 tsp Red pepper flakes
3/4 tsp Onion powder
1/2 tsp Thyme
1/2 tsp Oregano
Salt &  Pepper to taste
2 cups cubed yellow potatoes
¼  cup Almond Milk Unsweetened Original
1 ½  tbsp extra virgin olive oil
½  onion, diced
3 bulbs of  garlic, roasted and minced
2 cups fresh kale, coarsely chopped

Instructions

Begin by preparing the roasted garlic (optional to skip this step and sautee with the onions instead)
Preheat the oven to 375 F
Slice off the top 1/4" or so of the head of garlic to expose the cloves inside. Place the head of garlic on a piece of aluminum foil and drizzle the cloves with 2 teaspoons of olive oil.
Sprinkle with a bit of salt and wrap the head of garlic tightly in the foil.
Place in the oven and roast for 40-45 minutes, or until the cloves are tender. Allow the garlic to cool until you can touch it, then squeeze the cloves out of the skin to add to your recipe.

Boil potatoes until tender, and easily pierced with a fork.

While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Add onions and cook for 15 minutes, stirring frequently.

Add kale to skillet and cook for 2 minutes until wilted, stirring frequently.

Once done, strain and mash potatoes.
Add in your roasted garlic cloves (to taste) and mash together.

Stir in Almond Milk, chicken broth, herbs, Cordyceps, and seasonings. Mix well.

Add kale mixture last and stir to combine. Transfer to a serving bowl and serve hot.
